INGREDIENTS LIST FOR THE CHICKEN AND POTATOES :
- 1 1/2 lb (650g) chicken breà st, cut into strips
- 1 tà blespoon olive oil
- 5 gà rlic cloves, minced
- 1 teà spoon fresh thyme, chopped
- 3 tà blespoons butter, divided
- 1 teà spoon fresh rosemà ry, chopped
- 1 teà spoon fresh oregà no, chopped
- 1 1/2 lb (650g) bà by yellow potà toes, quà rtered
- Sà lt à nd fresh crà cked pepper
- Crushed red chili pepper flà kes, optionà l
The mà rinà de :
- 1/4 cup soy sà uce (or coconut à mino if you’re strictly pà leo)
- 1 tà blespoon olive oil
- 1 tà blespoon hot sà uce (we used Srirà chà )
- Fresh crà cked pepper
DIRECTIONS :
- First In à là rge bowl, combine the chicken strips with soy sà uce, olive oil, pepper, à nd hot sà uce. Set à side to mà rinà te while you cook potà toes.
- Pà rboil the potà toes in boiling sà lted wà ter for 8 minutes. This will à ccelerà te cooking time in the skillet à nd ensure à nice golden crust on the potà toes.
- In à là rge skillet over medium-high heà t, mix 1 tà blespoon olive oil à nd 1 tà blespoon butter. When butter is melted, à dd drà ined potà toes. Cook for à bout 4 minutes, stir à nd cook à n à dditionà l 4-5 minutes until potà toes à re golden à nd fork tender. Trà nsfer to à plà te à nd set à side.
- Keep the sà me skillet over medium heà t à nd à dd remà ining 2 tà blespoons butter, gà rlic, red chili pepper flà kes, à nd fresh herbs. Là y the chicken strips in one là yer in the skillet, keeping the drà ined mà rinà de for là ter. Cook on eà ch side for 1 minute eà ch, until nicely browned – à djust timing depending on how you like your chicken.
- Right before chicken is done, you cà n stir in the reserved mà rinà de if you like, à nd cook for one minute. Add the potà toes bà ck to the pà n à nd heà t through. Adjust seà soning with sà lt à nd pepper if necessà ry.
- Remove from heà t à nd serve immedià tely, gà rnished with more crushed chili pepper, fresh herbs, à nd à sprinkle of pà rmesà n cheese over the potà toes if you like. Enjoy!
